I am wondering if anyone has any tips for Passover foods that are type 1 friendly.. This will be my biggest challenge dealing with this dreadful disease.

Best thing to do is to go very low carb.  Easy because the carbs are the Chametz.  Have a small piece of matzah at sedar and then a few sweet potatoes for each meal. 

Hardest part for my son who was diagnosed with Type 1 at age 4 was to have to give up Splenda during this time.  But now there is Stevia which I think is Kosher for Pesach.

The cure to all of your woes for Passover-QUINOA!!!!!!!!!!!!!!!

Kosher for Pesach, about the same carbs as brown rice , works well with all spices - there's even a Quinoa Pasta - but there might be other fillers in it - so, check the label to see if it works for you....

Chometz is defined as "wheat, oats, barley, spelt and rye". Everything else is tradition. So, if controlling bg's is a nightmare at Passover because Ashkenazi style has such limited options - in the interest of health, Safardi tradition has way more food options. That might be the best option if your family decides that it can work for them. Just a thought...
For the Quinoa - you can choose from rinsed or unrinsed. If you go with unrinsed, you'll have to rinse it - may want to get a really small holed strainer - or, you can use a coffee filter too.
